SUPPLY MANAGEMENT
Supply is a material prepared within the factory for production needs example: cold water. Available supply management system including sources of supply, continuity of supply and quality of supply which meet quality requirements and food safety.
1. Requirements for the water used both for production, cooling, precleaning, cleaning and water is in contact with the equipment must meet the requirements of drinking water
2. The raw water must meet the requirements of clean water, water that is circulated
back for reuse should be treated and maintained under certain conditions so that there is no danger to food safety
3. Must be performed routine checks of water quality and water sources (wells
or springs) in accordance with the requirements and should guarantee continuity of water supply.
4. Monitoring of sanitary conditions tanks and pipes waterways process
5. The pipe should be made to the design and size appropriate to the intended use.
6. Septic tanks should not be located close to water sources, there should be no backflow or cross-contamination between the piping system bring water process
7. Non-consumptive water system should not be entered into the system water consumption or process water
8. The general requirements for the supply of steam that the boiler must meet security requirements and eligibility
9. The source of water used to meet the requirements of clean water and appropriate with the requirements of the boiler.
10. Steam must meet the requirements of drinking water, the steam is used
by way of direct contact with food or surfaces direct contact with food must not contain substances hazardous for food safety.
11. The flow of steam must be equipped with a steam trap, and installation
must fit and be cleaned to ensure the absence accumulation of dirt.
12. Examination of the steam plant safety and traffic material chemicals that are not potentially dangerous to workers in accordance with the rules of Occupational Safety and Health.
13. Boiler must not be a source of contamination, Mass rusty and steam hose should not be submerged or on the product. If required, the tip of the hose can be extended using material of stainless steel.
14. In order to supply clean air, make sure the air source must be clean, all pressurized supply must pass through the filter and is passed on water and oil trap (water and oil trap must be drained / cleaned periodically).
