CLEANING AND SANITATION
Machinery, equipment and containers in contact with the product is not a source contamination so prior to the implementation of production must be cleaned (cleaning) and sanitizing (sanitation).
1. A system of cleaning and sanitation machinery, equipment and containers that contact with the product
2. The cleaning and sanitizing system implemented and documented
3. Method / cleaning and sanitizing procedures must be validated
4. Period sanitation routine and non-routine must be validated.
5. Cleaning and sanitation facilities are complete and adequate.
6. Do verify the application of the system and method of cleaning and sanitation and are followed
7. Hygiene machinery, equipment and containers must always be controlled.
8. Schedule cleaning activities should be available which explains frequency, methods and cleaning materials are used.
9. The cleaning procedure should be explained to all employees
with a language that can be understood. Better if equipped pictures or diagrams.
10. All the ingredients of detergents and disinfectants used in the plant should be allowed as well as food grade and supplied by the company reputable.
11. The cleaning materials must not contain fragrances and should not contain toxic residue.
12. All cleaning agents and disinfectants must be stored at special room, separate from the production room.
13. The cleaning materials must be used in accordance with instructions from
manufacturer and use during the production process being lasted minimized.
14. Containers used for cleaning materials and disinfectant should be controlled by officers duly authorized.
15. Only the equipment of plastic or metal that may be
used in the production room and the condition should always well maintained.
16. Brush / broom should be colored, easily recognizable, and feathers made of synthetic material and not easily fall.
17. The tools are stored in the storage hygiene with by hanging.
18. Use rags for cleanup activities not recommended because of potential contamination microbiology and foreign objects
19. Activity cleaning by spraying method with pipe pressurized in the production room should be limited and not recommended.
20. Cleaning with pressurized air should be avoided and more better if you use a vacuum system.
