EXAMPLE SANITATION STANDARD OPERATING PROCEDURE - Operation of the Case Washer

INTRODUCTION
Cases must be washed after each use within the processing plant and after they have exited the building. This helps prevent cross-contamination and the introduction of pathogens from outside sources. In order for the case washer to function correctly it must be properly maintained.
 

MATERIALS

1. Supplies
a. Gloves
b. Goggles
c. Chlorinated detergent
d. Acid based detergent


2. Hazards
a. Burns from hot water and hot metal parts
b. Chemical burns to skin and eyes from exposure to chlorinated detergent and acid based
detergent. Wear goggles and gloves when using the concentrates. Avoid breathing the
vapors.
 

DAILY PROCEDURES
1. Pre-operation:
a. Visually inspect screens and clean as necessary.
b. Check for steam or water leaks.
c. Make sure there are no obstructions in the case washer.
2. Operation procedure:
a. Turn control switch on.
b. Wait approximately 15 minutes until the water temperature in 160ºF and the self
containment bowl is full of water.
c. Turn exhaust fan on.
d. Turn pump switch on.
e. Check for the proper concentration of the chlorinated detergent.
f. Turn conveyor drive switch on.
g. Press “acknowledge” on the touch screen.
h. Remove paper tags from the cases then begin washing them.
3. Post-operation:
a. Turn conveyor drive switch, pump switch and control switch off.
b. Close water and steam valves.
c. Turn exhaust fan off.
d. Check and clean screens as necessary.
e. Drain water in bowl only if it is dirty or contaminated with product.
 

WEEKLY PROCEDURES
1. Follow all of the daily operation instructions.
2. At the end of the day completely drain the tank and rinse out the case washer.
3. Clean all screens and check drain pipes for any blockage.
4. After cleaning and with the steam valve off, refill with water.
5. Return to daily operation procedures.

QUARTERLY PROCEDURES
1. Follow all daily and weekly operation instructions.
2. Turn chemical fill switch off at the Ecolab control panel.
3. Fill can washer with water and heat to 160ºF.
4. Add 2 gallons of acid based detergent.
5. Operate can washer for 30 minutes.
6. Drain and clean out can washer.
7. Turn chemical fill switch on at the Ecolab control panel.
8. Return to daily operation procedures.
