INTRODUCTION
1. Purpose – Clean equipment and utensils is of the utmost importance in any food processing facility. Equipment that is not able to be cleaned with the CIP (cleaned-in-place) system must be cleaned after each use in one of the COP tubes.
2. Definitions
COP = Cleaned out-of-place
MATERIALS
1. Supplies
a. Gloves
b. Goggles
c. Chlorinated alkaline cleaner
d. Sanitizer
e. Record of chemical concentration tests
2. Hazards
a. Burns from hot water and hot metal parts
b. Chemical burns to skin and eyes from exposure to chlorinated alkaline cleaner.
c. Corrosive damage to eyes and skin from sanitizer. Wear goggles and gloves when using
the concentrate. Avoid breathing the vapors.
PROCEDURE
1. Frequency – Equipment and utensils will be cleaned after each use.
2. Pre-operational procedures:
a. Move COP tub to the cleaning area.
b. Connect steam hose to the steam line.
c. Plug electrical cord into the wall receptacle.
3. Equipment cleaning procedure:
a. Dismantle equipment to be cleaned and rinse with water.
b. Carefully place parts in COP tub to avoid damaging parts.
c. Fill the tub with approximately 150 to 200 gallons of water.
d. Turn on the circulation pump and heat the water to 170ºF.
e. Slowly add the necessary amount of chlorinated alkaline cleaner.
f. Collect a sample of the cleaning solution and test the alkalinity and chlorine concentrations.
g. Circulate hot water and cleaner for at least 30 minutes. Check the flow and move the
equipment with a metal rod if necessary to achieve good circulation. Poor circulation
will affect the effectiveness of cleaning.
h. Drain COP tub into a floor drain.
4. Post-cleaning procedures:
a. Wearing gloves, rinse the equipment with an approved sanitizer.
b. Visually inspect each piece of equipment for possible damage and the presence of
residual cleaner.
c. Reassemble the equipment and return it to its storage area.
d. Remove steam hose from the steam line.
e. Unplug the electrical cord.
f. Move COP tub to the storage area.
RECORDKEEPING
Record the results from the alkalinity and chlorine concentration tests on the weekly test form.
